Fabrice Coutanceau

Chef and owner 

Son of restaurateur, Fabrice begin his career in France where he received training as a chef and pastry chef at the prestigious École hôtelière de Paris. After is formation, he worked in renowned restaurants, including La Musardière Relais et Chateaux.

After a stint at the Ministry of Culture as a private cook of Minister Francois Leotard, Fabrice Coutanceau left his native country to the great pleasure of Quebecers.

Thanks to is experience in the renowned caterers such as the very famous Le Nôtre and François Clerc Paris, Fabrice Coutanceau brings his expertise in Quebec, first at the Auberge Hatley, then at La Gascogne and finally at Cornellier traiteur. In 2003, he decided to create his own home to offer inventive cuisine that we love spontaneously.
